Proper Stock & Sauce Co.™ unites the talents of two of the culinary world’s most visionary chefs: Thomas Keller of US-based Thomas Keller Restaurant Group and Mitch Mitchell of UK-based TRUEFoods.
Prior to the company’s founding in 2019, Thomas Keller had been developing an idea for a brand of stocks and sauces made from only the most essential, natural ingredients. He had worked with Mitch Mitchell of TRUEFoods and knew he and Mitchell shared the same appreciation for — and approach to preparing — classic meat stocks with no additives or enhancers. The two chefs soon formed TKMM, an initialism created from their names.
Then the pandemic struck, bringing the restaurant industry to a temporary halt. Keller and Mitchell used the time to refine their recipes for seven initial products. When shipping from the UK to the US proved to be prohibitive, they chose a facility in Portland, Oregon to begin production. The brand was renamed Proper Stock & Sauce CoTM. to honor the authenticity of their approach and their UK-US roots. The company's products, including private label offerings, are now available to restaurants across the US.
Thomas Keller is renowned for his culinary skills and his exceptionally high standards. He has established a collection of restaurants that set a new paradigm within the hospitality profession. He is the first and only American-born chef to hold multiple three-star ratings from the prestigious Michelin Guide, as well as the first American male chef to be designated a Chevalier of The French Legion of Honor, the highest decoration in France. He has received countless accolades, including The Culinary Institute of America's “Chef of the Year” Award and the James Beard Foundation's “Outstanding Chef” and “Outstanding Restaurateur” Awards.
Mitch Mitchell started TRUEfoods in 2007 and has led the business from strength to strength. With over 40 years of experience within the foodservice industry, Mitch is passionate about the industry and always pushes the boundaries of food innovation. Mitch has enjoyed a varied career so far, having been the personal chef for King Hussein of Jordan and cooking for world leaders including the US President. He has spent time as head chef at several restaurants and hotels and as a product innovation director with some of the UK's most successful food manufacturing organizations, including working for Paul and Linda McCartney to develop Linda's vegetarian range of food.
